PB Miso Chicken Lettuce Wraps
Ingredients:
For the Sauce:
1/4 cup crunchy peanut butter
3 tablespoons miso
1/4 cup broth or water
1 tablespoon soy sauce
1 clove garlic, minced
3 green onions, minced
Juice of 1 lime
½ inch knob of ginger, grated
½ teaspoon of MSG (optional)
For the Wraps:
1 pound of ground chicken (ground turkey also works)
½ yellow onion, thinly sliced
2 cloves garlic, minced
Butter lettuce leaves for serving
1 large carrot, julienned
2 Persian cucumbers, julienned
Lime wedges for garnish
Additional option garnish: crushed peanuts, cilantro, basil, green onion, red pepper crunch
Preparation:
Whisk all sauce ingredients together; taste for seasoning and adjust as needed. Set aside.
Heat a bit of neutral oil in a large skillet over medium heat and add in the onion, cook until translucent. Add in ground chicken and garlic, stirring while you cook, until all of the meat is completely cooked through. Season with a couple of cracks of pepper and a pinch of salt. While the chicken is cooking, you can prep your toppings by julienning (cutting into long, thin match sticks) your carrot and cucumber and washing your butter lettuce. Prep any other optional toppings as well.
Once the chicken is cooked through you can cut the heat and toss the meat with the peanut butter miso mixture. Then assemble your lettuce cups as you like! This is such a delicious, savory and hearty meal, not to mention, SO quick to throw together.
This will feed 2 people as a full meal. Enjoy!
