Salty Sweet Tuna Salad

Ingredients: 

  • 1 can of tuna (packed in oil or water, dealer’s choice) 

  • ΒΌ cup kewpie (or mayonnaise) (3 tbs)

  • 1 tablespoon Dijon mustard 

  • 1 teaspoon champagne vinegar 

  • Splash of Worcestershire

  • 2 green onions, thinly sliced including whites and greens

  • 1 tablespoon capers, chopped 

  • ΒΌ cup finely diced celery

  • 2 tablespoons dried cranberries, chopped into small pieces  

  • Salt and pepper to taste

Preparation:

I’m just going to say this upfront: tuna salad is a very personal endeavor. I realize that some of you will see dried cranberries on this ingredient list and want to murder me BUT I am telling you, they add such a bright pop of delicious sweetness. I love this iteration of tuna salad, and hopefully, you will, too. 

Assembly is as simple as possible, you’re basically mixing everything together. However, I would note that I normally mix all the liquids (kewpie, dijon, vinegar) and taste before adding in the canned tuna to see how I may want to adjust or season. Then I mix in the tuna (which is strained from the can), followed by the add-ins. After you mix it all together, taste, season, adjust, and add more celery! Crack in more pepper! Make it your perfect tuna salad. Then enjoy how you like! 

I’m going to tell you right now when I tested this recipe at some point, I put in the kewpie and thought, that seems like too much. In the end, trust the process: with all the add-ins after the tuna, ΒΌ cup was the magic amount for me. Use your own discretion here, though.

Serves 1 - 2 people on a tuna melt or scooped over some lettuce. Live your life :)
